Grandma's Norwegian Pancakes
  • 1 cups milk ( I think Grandma told me 2 cups of milk)
  • 1 cup flour (sift flour, I forgot this step in photo's below)
  • 2 Tbsp sugar ( I think Grandma told me 1/4 cup but I use 1/2 cup)
  • 1/4 cup melted butter
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 4 eggs (eggs beaten in last so dough is not tough)
    1. Mix all ingredients together (I use hand mixer). Preheat pan or electric skillet to 350 degrees. Pour 1 ladle of batter in to pan. Maneuver pan to spread batter equally all over pan. Be sure to make the pancake thin, nearly see through thin. I like mine thicker than most. Let pancake bubble. Carefully flip (This is where it gets tricky and takes some practice and skill). Let underside of pancake get golden brown. This happens with in a minute or two.

    2/3 cup flour
    1 tsp salt
    2 Tbsp sugar
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1 3/4 cup milk
    2 Tbsp melted butter
    4 eggs
