Thumbprint Cookies

Photo Coming Soon Wet Ingredients: 1 cup softened butter                                                                                                                                         1 cup peanut butter 1 cup sugar 1 cup brown sugar 2 eggs 1 tsp. vanilla Mix dry ingredients in separate small bowl: 2-1/2 cups flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt Directions: 1. Mix first six ingredients until fluffy stiff. 2. Add remaining ingredients a little at a time, mix well. 3. Shape into 1 inch balls, then roll in sugar. 4. Bake at 350 for 10-12 minutes. Remove from oven and IMMEDIATELY make a thumbprint and push a kiss down into center of each cookie. Let cool completely--then enjoy! 40-50 kisses

Christmas Rum Balls

Photo Coming Soon Ingredients   1 pkg (6 oz) semi-sweet chocolate chips 1/2 cup rum 3 tbsp Honey 2 1/2 cups vanilla wafer crumbs (run thru a blender or food processor) 1/2 cup powdered sugar 1 cup chopped Walnuts (run thru a blender or food processor) Powdered sugar Instructions Melt the chocolate chips in the microwave. Stir in the rum and honey. Set aside. Combine vanilla wafer crumbs, powdered sugar and walnuts. Mix well then stir into chocolate mixture. Let stand for 30 minutes. Shape into 1" balls. Roll in powdered sugar. Store in an airtight container in the refrigerator. Makes about 5 dozen. 

Grape Jelly Meatballs

 PHOTO TO COME       Ingredients              2 Bottles Chili Sauce              10 oz Grape Jelly              3 lb Ground Beef or Costco Frozen Meatballs   Instructions Make homemade meatballs (recipe follows) or use frozen store bought. Place chili sauce and jelly in a small pan; stir together ensure jelly is melted and blended well. Put meatballs in a crock pot. Pour sauce over meatballs and stir occasionally. Low for 2 ½ hours.     Mom’s Favorite meatballs: 2 lbs. hamburger 1 cup milk 1 cup saltine crackers, crushed (or 1 c. Italian seasoned bread crumbs) *I added them to the milk to soak up the moisture- I’ve heard on the food network it makes the meatballs more tender.) 1 Tbsp. onions, grated 1 ½ tsp. salt 1 tsp. pepper Instructions Mix ground beef, milk, crackers, onion, salt and pepper in a bowl. Don’t over mix or it will result in a tougher meatball. Form into round balls. Place on a greased cookie sheet and bake at 350 for about 10 minutes.

  # 1 Krumkake  Petersen Family Heritage Recipe (My Grandmother Alice's recipe) 4 eggs 1 cup sugar 1 cup melted butter ½ teaspoon vanilla 4 Tablespoons cream 1 teaspoon cardamon 11/4 to 11/2 cups flour Beat eggs well, add sugar a little at a time. Continue to add vanilla, cream, and cardamom. Add butter last.   Drop batter on hot Krumkake iron and bake to golden brown. While hot roll in a cone shape with cone tool.   # 2 Krumkake Family Heritage Recipe  6 eggs 1 1/2 cup sugar 1 cup melted butter 1 teaspoon vanilla 4 Tablespoons cream 1 teaspoon cardamom 3 cups flour Beat eggs, add sugar, then soften butter, flour, and flavoring.
