Animal Kingdom Lodge – Boma French Toast Bread Pudding  with a warm Pecan Praline Sauce  *this recipe has been converted from a larger quantity in the restaurant kitchens and not tested for home use. The flavor profile may vary from the restaurant’s version. French Toast Bread Pudding 4 loaves Raisin Bread 2 loaves Kaiser Rolls 1qt Egg Yolks 2TBSP Cinnamon 1 TBSP Salt 1 cup Sugar 2 cup Syrup 1 gallon Heavy Cream Method: Cut bread into 1×1 cubes and place into a Lexan. Mix egg yolks, cinnamon, salt, sugar, syrup and heavy cream together in a cambro. Pour egg mixture into the bread and mix thoroughly. Disneyland Resort Recipe: Yukon Potato Stack   With Gruyére and Parmesan Cheeses Serves 10-12   2 1/2 lbs. Yukon Gold Potatoes 1 1/4 cup Parmesan Cheese, Shredded 1 1/4 cup Gruyere Cheese, Shredded 2 Tbsp. Olive Oil 2 Tbsp. Shallots, minced 1 Tbsp. Fresh Garlic, minced   1 1/2 cups  cups Heavy Cream Salt & Ground Black Pepper to taste Preparation: · Preheat oven to 350°F. · Spread a 13 X 9X 2 or 11 X 7 X 2 inch pan. · Peel and slice potatoes to about 1/16 inch thick. (Use a mandolin or food slicer to slice potatoes uniformly.  Do not rinse or hold potatoes in water because the starch will be washed away). The Pioneer Woman's Egg Nest breakfast   Ingredients 6 whole Medium Russet Potatoes (I used 3 large Potatoes) Salt And Pepper, to taste 24 whole Large Eggs (I used 11) Non-stick Cooking Spray 11 Bacon strips (I added 1 piece of bacon on the outside of the nest) Preparation Instructions Preheat the oven to 400 degrees. Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper. INCREASE OVEN TEMP TO 425 DEGREES. Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don't press the potatoes firmly against the pan; they should sit lightly in the pan.) Grandma's Norwegian Pancakes

  Ingredients: 2 cups milk  1 cup flour (sift flour, I forgot this step in photo's below) 2 Tbsp sugar ( I think Grandma told me 1/4 Tbsp., or as desired) 1/4 cup melted butter 1 tsp. salt 1 tsp. cinnamon 4 eggs ( eggs beaten in last so dough is not tough)   Directions Mix all ingredients together (I use hand mixer).  Preheat pan or electric skillet to 350 degrees.  Pour 1 ladle of batter in to pan. Maneuver pan to spread batter equally all over pan.  Be sure to make the pancake thin, nearly see through thin. I like mine thicker than most.  Let pancake bubble.  Carefully flip  This is where it gets tricky and takes some practice and skill.  Let underside of pancake get golden brown. The Pioneer Woman's Beef Stew with Beer and Paprika     Ingredients 3 Tablespoons Olive Oil 1 Tablespoon Butter 2 pounds Stew Meat 1 whole Medium Onion, Diced 3 cloves Garlic, Minced 1 can Beer, 12 Ounce Can (I use Guinness Stout) 4 cups Beef Stock (or 4 Cups Water + 4 Beef Bouillon Cubes) 2 cups Water (additional, If Needed) 1 Tablespoon Worcestershire Sauce 2 Tablespoons Tomato Paste 1/2 teaspoon Paprika 1/2 teaspoon Kosher Salt Freshly Ground Black Pepper 1-1/2 teaspoon Sugar 4 whole Carrots, Washed, Unpeeled, And Roughly Sliced 4 whole New Potatoes, Quartered I used 1/2 bag of frozen Peas and Carrots 3 Celery Stalks chopped Minced Parsley (optional) Preparation Instructions Heat oil and butter in a large pot over medium-high heat. Mom Caskey's (Grandma's) Family Beef Soup Recipe : Ingredients: 1lb Beef (I use more) 3 Carrots Celery Stalks 2 or 3 Large Potatoes Mushroom 1 Lrg Onion 2 Garlic Cloves Salt & Pepper to taste Italian Seasoning to taste Tomato Sauce Can Whole Tomatoes (1 or 2) 1 Box Beef Broth 1 cup Flour Directions: In a large pan put oil to cover bottom. Cut your meat into bite size squares. Chop half your onion and chop garlic. In a bowl add the flour and salt and pepper. Toss in meat. Mix until meat is covered well. Brown your onion (½) and all garlic cloves till caramelized then add meat. Dump in chopped carrots, 2 stocks chopped celery, quartered potatoes, large can whole tomatoes (break up) and small 8 oz. can tomato sauce. I caramelize my mushrooms and other 1/2 of the onion then dump in my soup pot.   Pour in beef stock (add water to come up to amount you want) Bring to boil then turn down to slow boil for 2 or 3

Disney Hollywood Studio's 50′s Prime Time Café Mom’s Meatloaf Ingredients: 2 Pounds of Ground Beef 1 Pound of Ground Pork 4 Large eggs, lightly beaten 1 cup seasoned breadcrumbs (I added 2 carrots shredded)  ½ cup finely chopped onion ¼ cup finely chopped green bell pepper ¼ cup finely chopped red bell pepper  2 Tablespoons Worcestershire sauce (another) ½ teaspoon Worcestershire sauce (to be used separately) ½ teaspoon of coarsely ground black peppercorn ½ teaspoon coarse salt ½ cup Ketchup 1 Tablespoon Brown Sugar 1 Teaspoon Dijon Mustard Preheat oven to 350 degrees F – Lightly oil or spray 2 loaf pans (even lasagna type trays) In a large bowl, combine the beef, pork, eggs, bread crumbs, onion, green pepper, red pepper, 2 Tbsps. WDW Liberty Tree Tavern   New England Pot Roast     Pot Roast Recipe Ingredients:   -1/4 cup vegetable oil -3 pounds boneless beef shoulder roast -1/2 cup (1 stick) butter -2 cups large diced carrots -2 cups large diced celery -2 cups large diced onion -1/4 chopped garlic -2 tbls chopped fresh thyme -1 cup all purpose flour -1 cup burgundy wine -6 cups beef broth (48 oz container) Preheat oven to 350 degrees Fahrenheit. Prep all of your veggies.   Clean, peel, and dice the carrots. Heat 1/4 cup oil in heavy pan. Pan should be oven safe and have the ability to be covered. I use a Cast Iron Dutch Oven (http://www.amazon.com/Lodge-EC6D43-Enameled-Island-6-Quart/dp/B000N501BK) Brown the meat on all sides. That will take about 2-3 minutes on each side. Do not let it scorch. Remove the meat once browned on all sides and set aside. Add the stick of butter to the pan.
