TRADITIONAL ROASTED TURKEY

Ingredients

 1 Whole turkey (I used a 20-pounder), brined

1 cup (2 stick) butter, softened

1 pkg. Fresh Poultry Herbs;  Thyme, Sage, and Rosemary Chopped

Salt and Pepper (To taste about tsp or so)

 
Directions

  1. Preheat oven to 350.

  2. If you brined your turkey, rinse it well under cold water. Fill the sink with fresh cold water and allow the turkey to soak for 15 to 20 minutes to remove any saltiness. Pat the turkey dry.

  3. In a small bowl combine with butter, rosemary, salt, and pepper.

  4. Place the turkey on a cutting board and rub the herb-butter on the bottom of the turkey. Place turkey in the roasting rack, breast side up and rub the top with the herb-butter.  

  5. Loosely stuff the turkey with the bread stuffing in the front cavity. Cross the legs together and tie them with kitchen twine. Stuff the other end and close the rear with skin over the stuffing and sew with needles tightly so no stuffing falls out (this can be tricky).

  6. I have a Turkey roaster with a lid. This is one of the most fail-safe pans to make the perfect bird. There is no worry if foil is closed around the bird. It keeps it moist the entire time it cooks (which is the most important part of making a turkey.

  7. Insert a digital meat thermometer into the thigh

  8. Roast and baste turkey every 30 minutes.

  9. Continue roasting the turkey until the thermometer reads 165 to 168, then remove the turkey from the oven. Cover loosely with clean aluminum foil until you are ready to carve!
