1 whole chicken
7 - 10 Potatoes (I use Small Yukon Gold's)
2 - 3 Carrots chopped
1.5 Chop Onions in to ringlets
1 stick of Butter
Salt and Pepper to taste
Fresh Thyme, Sage, and Rosemary, etc. herbs (substitute Dried Poultry Seasoning ok)
Add Potatoes to the bottom of the insert to raise the chicken off the cbottom of the crock Ppot. Mix Butter, herbs (or dried seasoning), garlic, in a bowl. Wash chicken pat dry. Stuff a few carrots, celery, onions, and fresh herbs in to chicken cavity. Smother butter all over chicken. Place chicken on top of potatoes. Stuff carrots and celery around chicken. Put ringlets all over top of the chicken. Cook on low for 6-7 hours or high 4 hours. Place the cooked chicken under the broiler for about 5 minutes to brown and crisp the skin.
